Muslim children in Italian school canteens are faced with the problem of choosing religiously clean food. As most of the Islamic food rules concern meat, meat in general – and pork in particular – is the riskiest food or ingredient in canteen dishes. Sourcing halal (i.e. permissible) meat from ritually slaughtered animals could solve the problem, and a growing halal distribution network across Italy is ready to cater for this need. The administrations in charge of education and their meal suppliers, however, seem to be unaware of what demand wants and supply can offer, keeping the two sides of this market disconnected.
